Gluten-Free Fresh Herb Vinaigrette

Gluten-Free Fresh Herb Vinaigrette

Ingredients

  • 1 cup olive or vegetable oil

  • ⅓ cup red or white wine vinegar, rice vinegar, or cider vinegar

  • ¼ cup finely chopped shallots

  • 2 tablespoon chopped fresh oregano, thyme, or basil, or 1 tsp. dried oregano, thyme, or basil, crushed

  • 1 tablespoon Dijon-style mustard or 1/2 tsp. dry mustard

  • 2 - 3 teaspoon sugar

  • 2 cloves garlic, minced

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

Directions

  1. In a screw-top jar combine all of the ingredients. Cover and shake well.

To Store

If using fresh herbs, cover and chill up to 3 days. If using dried herbs, cover and chill up to 1 week. The olive oil will solidify when chilled, so let the vinaigrette stand at room temperature 1 hour. Shake well before serving.
